Verdita Cocktail

INGREDIENTS

  • For the Verdita Base
  • 1 cup pineapple juice
  • 1/3 loosely packed cilantro leaves
  • 1/4 to 1 fresh jalapeño, stems and seeds removed if you want it less spicy
  • For a Single Cocktail
  • 2 ounces mezcal (it is also delicious with tequila or vodka)
  • 2 ounces verdita base
  • 1/2 ounce lime juice
  • 1/2 ounce simple syrup

INSTRUCTIONS

To make the verdita base add the pineapple juice, cilantro and jalapeño to a blender jar and blend until smooth.  Strain into a small pitcher or large measuring cup.  This is enough base to make a 5 to 6 cocktails.

To make a single cocktail, measure 2 ounces of the verdita base into a shaker filled with ice.  Add the mezcal, lime juice and simple syrup.  Shake for 10 seconds, then strain into a glass and add fresh ice.
