Pickled Jalapeños Rellenos



  • 8 to 10 pickled jalapeño chiles
  • 6ounces goat cheese
  • 3/4cup chopped cooked bacon
  • 1/4cup chopped cilantro


Cut a shallow T through the flesh of each chile. Using a small spoon, carefully scrape out the seeds and veins. In a large bowl, mix together the goat cheese, bacon and cilantro. Scoop the mixture into the chiles and serve without hesitation. 


  1. I will definitely make these simple pickled Rellenos. However I would love the recipe for the pablano Rellenos you prepared on a recent show stuffed with pork. Thank you! Watching you cook on tv makes me want more Mexican food!
