For the chipotle simple syrup Remove the chipotle chiles from the can (leave behind as much of the adobo canning sauce as possible) and add to a blender with the simple syrup. Blend thoroughly and strain into a jar. Cover and refrigerate what you don’t use in the drink
Combine the lime juice and chipotle simple syrup in a shaker with ice and shake well. Pour into a rocks glass with fresh ice, top with sparkling water and stir.
