Flores de Calabaza

USES: As a filling in quesadillas and other corn masa snack (antojitos), in soups and occasionally for stuffing or in sauces.

FINDING: In farmers markets, in specialty produce stores and cultivated in your garden.

CHOOSING: Fresh-looking blossoms are the most gratifying to work with. Slightly withered ones work fine for most Mexican preparations since they are cooked.

STORING: In the refrigerator on a plate or tray, loosely covered with a plastic bag, for 3 days.
