Creamy Queso Anejo Dressing

Aderezo Cremoso con Queso Anejo
Recipe from Season 7, Mexico —One Plate at a Time
Servings: 11/4 cups


  • 3/4cup vegetable oil, olive oil or a mixture of the two
  • 1/4cup very light vinegar (like rice vinegar)
  • 3tablespoons mayonnaise
  • 2 to 3tablespoons freshly gratedMexican queso añejo or other garnishing cheese such as Romano or Parmesan
  • 1scant teaspoon Salt


Combine all ingredients in a blender jar and blend until smooth. Taste and season highly with additional salt, if necessary. Pour into a jar with a secure lid and refrigerate until ready to use. Shake well immediately before use.
