Details for our Next Live Cooking Class!

It’s that time again! The next installment of Rick’s live cooking class takes place Friday night and we do hope you’re hungry. Rick Bayless will be going live on YouTube at 6 p.m. (CST) Friday, April 30 to lead another one of our popular live cookalongs.

These cooking classes are open to anyone who joins Rick’s YouTube channel at the “Live with Rick!” membership level at $9.99/month, which also gives you access to live chats and tons of brand new recipes videos. (Looked at another way, it’s a $10 cooking class led by Rick that comes with a bunch of thoughtful, educational extra videos.) Join here.

Friday’s Recipes:


• Guajillo-Tomato Enchiladas with Braised Greens (Or Roasted Chicken) and Melted Cheese
Seasonal Fruit with Warm Tequila-Lime “Espuma”

Grocery & Equipment List

Vegetables, fruit and miscellaneous fresh items

  • 1 head garlic 
  • 1 large white onion
  • ¼ cup lime juice plus 1 lime to zest
  • ¼ cup orange juice
  • A dozen corn tortillas
  • For vegetarian version of the enchiladas:  1 bunch lacinato kale

Pantry

  • 6 guajillo chiles
  • 1 (15-ounce) can of fire-roasted tomatoes
  • Black pepper
  • Cumin
  • Mexican oregano
  • Olive or vegetable oil
  • Salt
  • Sugar
  • ¼ cup tequila


Meat and Seafood

  • 2 cups vegetable or chicken broth
  • For chicken version of the enchiladas:  About ½ pound roasted chicken

Dairy

  • 4 eggs
  • Mexican melting cheese (Chihuahua, quesillo, asadero and the like) or Monterey Jack, or brick or mild cheddar


Equipment

  • Food processor or blender
  • 4-quart saucepan with lid
  • 12-inch skillet with lid or cookie sheet to cover
  • 13×9 inch baking dish
  • Stainless steel bowl to nestle in saucepan
  • Whisk

      Anytime we post a members-only video, you should get a notification on your phone. Additionally, whenever we post to the members-only channel, you all get an email sent automatically.

      And don’t worry! We start the stream a little early in order to allow people to find their way to it.
