A Very Special #TacoTuesday for “The Morning After”

TacoTuesdayLogo_blueThe night was long. The party is over. The cupboards are bare, the house is a mess, the sun’s coming up and you’re ravenous. 

The good news? This “morning after taco” will sustain you for what may feel like a long day ahead. 

Yeah, it’s little more than a garnished fried egg. But this one’s all about the details: sun-dried tomatoes, bacon, Mexican hot sauce and a hit of fresh cheese pack tons of flavor in this otherwise simple dish.

Set a 10-inch nonstick skillet over medium heat and add the bacon fat (or one of its stand ins). Crack the egg straight into the pan.

Using a spoon, gently break up the egg yolk.  As the egg cooks, sprinkle on the sundried tomatoes, bacon, cheese and hot sauce. Remove from heat and add the avocado and cilantro.

Slide the garnished egg on to a warm tortilla and greet the morning (or afternoon - we don't judge.)
