Hornillo – A Temporary Brick Fire Place for Cooking Paella. Rick prefers to cook Paella over a wood fire, to lend that smoky traditional flavor to the dish, not to mention the fabulous spectacle of it all. The hornillo is a semi-circular fire pit that supports the paella pan. To build the hornillo, place enough bricks (roughly seven) in a semi-circle on a flat, fire-proof surface where you can safely build a fire. Make sure the bricks are set up so the exterior edge of the pan fits the hornillo exactly, providing a solid support. Build the hornillo six courses high, staggering the bricks to create a sturdy lattice-like structure that allows air to feed the fire. Get the fire going inside and you are ready to cook!

A Note From Rick:

Wouldn't you know it?  After two years of carefully crafting a line of contemporary Mexican cookware and serveware with Copco, the company was sold to one of those multinational conglomerates who decided my perfectly wonderful just-being-released offerings weren't in line with where they (the nameless "they" of the mulinational conglomerates) wanted to take the company.  And they did it without even having stopped by to say "hi," to have a margarita, to taste my (if I do say so myself) incredibly fabulous mole poblano. So some of the pieces you might be curious about on this show (and other shows) may be from the first run of the now-defunct line … I'm sorry to say.  But cheer up:  I'm back at the drawing board, determined to give you some cool stuff for your kitchen and dining room.   And if you're interested in a decent alternative for the queso fundido pan, think about the Staub mini fondue pan.
