Jarabe de Jamaica
From Season 9, Mexico: One Plate At A Time
Makes 1 ½ cups
2 cups sugar
1 cup (1 ½ ounces) dried hibiscus flowers (often called jamaica, available at all Mexican grocery stores)
Scoop the sugar into a medium (3-quart) saucepan, add 1 cup of water and set over medium heat. Simmer until the sugar completely dissolves. Remove from the heat and add the flowers. Steep the flowers for 30 minutes, then strain and discard flowers. Cool completely before serving.
