One thing that's often overlooked is that our philosophy of  supporting local producers also extends to our bar.  Jen Barozzini, Rick and Goose Island Brewery created a signature beer for the restaurant which up until now, has only been available on tap.  The beer is called Marisol and within the next few months, it's launching in bottles.  This is one of the cocktails that Jen created to showcase this beer.  The passion fruit flavor pairs so well with the citrus notes of Marisol and the combination makes for a perfect summer cocktail. 

 



Ingredients

6 ounces passion fruit puree (you'll find this in the frozen food section of Mexican or ethnic groceries)
3 ounces jamaica* or cranberry juice
6 ounces fresh lime juice
6 ounces simple syrup
3 to 4 cups small ice cubes
3  12-ounces bottles Marisol beer (or any unfiltered wheat beer - Jen says that Harpoon UFO would be a good choice)  


Directions

In a large pitcher, combine the passion fruit, jamaica* or cranberry juice, lime juice and the simple syrup.  Cover and refrigerator for 1 hour or until chilled.  You can do this several hours in advance.

Set out 6 red wine glasses.  Fill the cocktail shaker 2/3 full with the ice cubes and pour in half of the passion fruit mixture (about 1 1/4 cups).  Cover and shake for 10 to 15 seconds.  Strain evenly into three of the glasses, then top each glass with 6 ounces of beer**.  Finish off the remaining cocktails in the same way.

 

Testing Notes:   You can use the Jamaica Cooler recipe on the web site without adding the sugar. 

** In order to maintain the correct proportions in mixing this drink, when measuring the amount of beer, take your measurement minus the foam.
