Creamy Queso Anejo Dressing
Aderezo Cremoso con Queso Anejo
Makes about 1 1/4 cups
Recipe from Season 7 Mexico - One Plate at a Time
3/4 cup vegetable oil, olive oil or a mixture of the two
1/4 cup very light vinegar (like rice vinegar)
3 tablespoons mayonnaise
2 to 3 tablespoons grated Mexican queso anejo, romano or parmesan
1 scant teaspoon salt
Combine all ingredients in a blender jar and blend until smooth. Taste and season highly with additional salt, if necessary. Pour into a jar with a secure lid and refrigerate until ready to use. Shake well immediately before use.
